Day 29:trainer and Spicy chicken

Day 28 I saw my trainer for the first time. We took my weight, measurements and body fat percentage. I do not remember it all but Ill get it and post it when I weigh in next time. She told me what classes to go to at the gym and how often I should do cardo and strength training. Then we set out to see how flexible I was. She was very surprised on how flexible I am but I was not! LOL. She took it easy on me and told me when I was leaving after an hour of meeting with her that next week will be alot harder! O BOY! I have always wanted a trainer from Jr. High when I got out of sports. I set a goal or a dream and here I am going after it!


I have not posted in a while due to...I have not been eating right because due to lack of money. :D Still living on part time money right now. Soon I will have a better pay and be able to eat better! I will be eating carbs because of the work out plan my trainer has me on. She had me get the book Eat- Clean Diet Recharged by Tosca Reno. Great book by the way! 


I am so excited on what God has in store for my life through this dream that I have wanted from Jr. High and how God is going to move through me and show me so much more of himself. I was telling my dad that when I have kids I do not want them to see mom as over weight but I want to teach them what is healthy and see that mom eats healthy. I never want my children to struggle with being over weight. :D




One of my facebook friends messaged me a recipe I would like to share! I have not tried it yet but it sure does look yummy!  It's called sweet and spicy chicken. You just season skinless chicken tenders with salt, pepper, chili powder and garlic powder. Wrap them in bacon and then roll the wrapped up chicken in a little bit of brown sugar- it doesn't take much at all! And then bake at 400 for about 30-45 mins. I put them under the broiler for about 5 mins and the bacon got crispy. Thanks Katie for sharing!!

Day 20, 21 & 22: I may be weak!

" I may be weak, your spirits strong in me. My flesh may fail, my God you never will! Give me faith to trust what you say." worship song :-)

I am so weak at times ladies and gentlemen! I have had so much pride to try and hide who I am and what i really struggle with! I have to tell my self "pride walk out the door!" you read my status right! I am weak but my God is strong. From day one I said my theme verse would be I can do all things through Christ who gives me strength. I am a person who has struggles like everyone else. But that does not keep me from going toward my goal. Yes, at times my flesh wants certain things (did I find that out this weekend or what!) I can not let that set me back! I will not let that set me back!

I want to encourage each one of you that when you fail, do not stop and keep striving toward your goal. It's "your" goal! You make it what it is. You are your worst enemy! Hit yourself for what you did but get back up! Did you hear me ?!! GET BACK UP! What are you going to do today to go toward your goal?

Day 19: steak pork chops

Steak pork chops slow cooker.

2 cups of Teriyaki
2 - 3 steak pork chops
1/4 cup of minced onions
1 tsp of chili powder

Put steaks on the bottom of the slow cooker. Cover with teriyaki. Then pour water over the steaks until they are covered. Mix in onions and chili powder. Cook on low for 7 hours! Falls apart after cooking. Good on rice ( mike said was really good!) or veggies!( which I had!).

It's been a good day! I'm very ready for the weekend!

Day 19:
B- two eggs with cheese
Ms- nothing
L- chicken pecan salad (cheddars) very little dressing
As- sunflower seeds
Dinner: pork steak with broccoli
Snack- 2 girl scout cookies
Water- 100 oz of water
Workout- soccer practice!!!

Day 17 & 18: cancer fighting vitamins and minerals

I just want to say thank you to all of y'all who read my blog. My weight has never been something I've been comfortable talking about but now the Lord is working in my life to better my life physically and spiritually. It is a day by day journey. I'm learning to not eat off of my emotions or eat because everyone else is doing it! I'm learning self control which to be honest is totally hard for me and my friend food! With this process and where I am this week is praying and asking the Lord what I can have and what is best for me. I pray hard that it's pizza! Lol I've been eating my meat, eggs, broccoli and other healthy things. No pizza!

This week as you can tell I've been eating subway! Oh no it's carbs! :-) my stomach has shrunk which is the best thing. I don't eat as much and I'm not hungry.

Things I need to work on are being prepared to eat and make dinner even though I'm tired from the day. I was so exhausted last night that I had Taco Tuesday! But one thing I have learned through all this is every meal and every snack is a new decision. I don't have to wait till Monday to start eating healthy or make better choices .

Day 17:
B- two eggs with cheese
S- cheese stick
L- the other half of my subway
As- cheese stick
D- taco Tuesday
Water- 40 oz
Workout- none

Day 18:
B- two eggs with cheese and half avocado
Ms- cheese
L- pork chops, broccoli and salad
As- nothing
D- turkey sub from subway
Workout- one hour cardio
Water- 80 oz

The recipe bellow I have not tried but am going to try it soon! I can't wait! Have you ever had it?

Day 16: new recipe.. 2 thumbs up

Italian pork chop- ish
6 pork chops
2 pk of Italian dressing ( make the dressing by following the package. It's better for you because there is no sugar!)
1 cup of Parmesan
2 tsp of Italian seasoning
5- potatoes (for those of you eating carbs)
1 stock of asparagus ( you could leave out the potatoes and add any type of veggies you like! I had people over and decided they could eat the potatoes )

1. Put the pork chops on the bottom in the slow cooker.
2. Make the Italian dressing. After making the dressing add a cup of Parmesan to the dressing and mix well.
3. Pour 1/4 of the dressing on top of the pork chops.
4. Cut the potatoes in thin slices ( if you cut them to big it takes longer to cook)
5. Pour potatoes or veggies over the pork chops.
6. Pour the rest of the Italian dressing over the potatoes or veggies.
7. Cook on low 5-7 hours ( this depends on the potatoes)

It was very very yummy! The asparagus was great and the potatoes were good as well! I had guest over and they said it was really good as well! :-) five stars I must say!!!!

Day 16:
B- two eggs with cheese and ham
Ms- nothing
L- 6 inch turkey sub
Ms- string cheese
D- asparagus , pork chop, a few bits of potatoes
Treat- dark chocolate
Water - 68 oz
Work out- nothing

Day 15: carb day

Yup you read the subject right! I ate carbs today! Pizza for lunch and subway for dinner. You may know I play indoor soccer. I ate no carbs last week before my game and I about died! I needed some carbs so I could have some energy for fast indoor soccer game! ( could have made a better lunch!)

You might be thinking... "Mindi but you are on a diet! How could you do that?! Now you won't get back on your diet!"
I want to tell you this is my life and it takes determination. I am making a life change not a diet to follow the rest of my life. I'm make wiser decisions on what I am eating and love eating low carb. I feel so much better like I said before when I do low carb. :-) Do I feel bad that I ate pizza? No. I do have to work on portion control over pizza! I am being honest with you! :-) its one day at a time and one meal at a time! :-)

Day 15:
B- 2 eggs and ham
Ms- nothing
L- pizza
As- nothing
Dinner: 6 inch turkey sub with a lot of veggies
Water: 80 oz
Work out: soccer game

God game me a word this year and it's time. Everything comes in due time.

Day 13 & 14: replacing my cravings

Last blog I talked about cravings and what people crave for or want. Some might be to gain weight, build muscle, save money, start Christmas shopping in January and the list could go on. Well I am here to tell you I CRAVE SUGAR! :-) yup that ice cream with brownies, cake, and cookies! Yummy! Here is the thing! I crave those things so much that at the end of the week I want to give one of those treats if I do good on my life change.(tJ's frozen yogurt!!) as much as I crave that sugar I want to crave my Father in heaven. I want to talk to him and sit with him more! I want to crave my daddy!

To get you up to date about yesterday. I went out to eat with a sweet dear couple of mine at Olive Garden. I was going to make today my treat day but I decided to make last night that. TJ's frozen yogurt will have to wait till next Saturday. :-)

Day 13:
B- eggs, ham, mushrooms
S- hard boils egg
L- salad with cottage cheese and chicken
As- nothing
D- chicken with mash potatoes , salad and two bread sticks (only had about 4 bits of mashed potatoes and ate half my chicken)
Water- 50 oz
Work out- nothing

Day 14:
B- 2 eggs, mushrooms and cheese scrambled
Ms- string cheese
L- Quiznos salad (Mediterranean chicken)
As- nothing
D- chicken, half avocado , slice cheese
Water- 40 oz (so far.. It's still early)
Workout- cleaned house 8 hours

Day 12: what you put in your mouth

It's day 12 that I've been doing Jorge Cruise fast track. I'm so blown away at the results! I make my meals a head of time and just cook my dinners at dinner time after work. I'm finding new recipes to help me spice things up!

I was talking to some of my friends who are interested in what life change I have made. we talked about how eating is the way to drop the pounds! Yup! I had it mixed up too! Ate and ate junk and work out about an hour and a half with no results. Don't get me wrong working out is great to tone the body and relieve stress. BUT it's all what you put in your mouth and how much you put in. Eating healthy can be bad too if you eat way to much. Portion control is key! Also how fast you chew and eat your food make a big difference. :-) these are things I have to remember! :-)

Day 12: fast track
B- ham, 2 eggs, half and half, cheese
Ms- cheese stick
L- amazing Asian salad (with avocado )
As- cheese stick
D- crock pot pork chop ( this was so good!) and zucchini
Water- 68oz
Work out- soccer practice

Remember you have to give up something to get to where you wanna be! No pain, no gain! You can do it! Believe in yourself!

Day 11: 9 pounds in 10 days?!

Well I tried to wait to weigh myself until day 14 but I couldn't. This morning I rolled out of bed and walked over to my scale and said, "here goes nothing!" I was scared because I had one day off the 14 day challenge I put on myself on and I ate half a bun last night. Call me crazy! :-) I stepped on the scale and I could not believe my eyes. It read 209. I was in shock! So I stepped back off the scale and then stepped back on. It read back to me 209! Celebration went on in my head and in front of my scale! All that I have done is made better choices and changed my thoughts to " I CAN do this, it is worth it!"

Am I doing this the healthy way? I do believe so! I eat carbs from my veggies, get my milk, protein , and water all in. I am not starving at all through out the day when I eat all my meals and snacks. And I've seen others do this and keep off the weight. (i am following a blog) To be honest with you, YOU have to find out what way of eating is best for you. There is so much out there. I encourage you to do something for you and do something for yourself.
I am working on one of my fruits and that's self control! Lord help me!

Day 11:
B-ham, 2 eggs, mushrooms and cheese
Ms- hard boiled egg
L- awesome Asian salad
As- hard boiled egg
Dinner- hamburger patty with cheese
Treat- 4 handfuls of pop corn and diet coke (went to the movies)
Water- 60 oz

Day 10: Made to Crave something in life

If you can not tell I love the book above. It has things that I have felt for years on paper and points me always back to Christ.

When I think of craving something I think of doing anything possible to get the thing that I desire and want. It reminds me of Black Friday that everyone waits outside a store the night before to get that one thing that they want, have a desire for or crave. They do this, one because they have the desire to do this and two because they get the product they crave cheaper! Then when the doors open to the store everyone starts pushing and running to the one thing they want or desire. Then you get to the aisle and see all the other 15 people who want the same thing but then there are only a limited stock of 13 on the shelf. Then it might get as crazy as people fighting over the thing they desire. People desire the thing they go after and fight for it because its at a good price and you waited all that time and energy! You are craving that product! You want that thing! You want that price! You might be one of those people! You might have the desire to do that and that's totally ok!

We were made to crave things and mine has been food for years!! Always been over weight through Jr. high and high school. I am called for a bigger craving that is everlasting and that's God. Taste and see that it is good! "how lovely is your dwelling place, O LORD Almighty! My soul yearns, event faints, for the courts of the LORD; my heart and my flesh cry out for the living God" (psalm 84:1-2).

I want and need my cravings to be on the Lord. This is something I need to change in my mind. When I want those yummy Oreos and milk that stick to my booty...I pray that I crave the living God as much as food.

Day 10: was driving all day!
B- ham, eggs and mushroom
Ms- cheese stick
L- McDonald's bacon and chicken salad
As- no carb energy drink and sunflower seeds
D- burger king burger - I ate only half the bun. It had bacon cheese, veggies and patty. No French fries
Water- 40 oz( need to work on this!)

Day 9: tired of compromising

I think we all compromise something in our life. I would use the excuse that people do not care what I am going and just eat. About three years ago I was 180 pounds (seems like a dream now!) I did a lot of compromising and got to where I am now. The quote above hit home today when I read it. I am made for God's promise in every area of my life!!

Day 9:
B- 2 over easy eggs, 2 bacon
Ms- string cheese
L- nothing
As- diet coke ;-)
D- (my boyfriend made chicken ranch, ate about three bites! I had to try it because he made him dinner! Super proud!) I had pork chop (size of a deck of cards) and broccoli

Below is a picture on how I set myself up for success during the week. Starting at the left I made ham crusted breakfast quiche and on the right I made amazing Asian salad. The recipes are from the Belly Fat Cure Fast Track pages 117 and 125. I'm not a big morning person and time seems to slip away from me in the morning so I pre make my breakfast and reheat in the morning. On the fast track lunch is usually always salad. I wanted to switch it up some and try the Amazing Asian Salad. The back bowl of chicken is some that i boiled to have on hand through out the week! For dinner I love to cook when I get home from soccer practice or work. :-)

Day 6, 7, & 8: weekend travel!

I do not even know where to begin. I went out of town this weekend on a girls weekend! It was so much fun! I ate great on Friday but Saturday I went off of the fast track with Jorge Cruise. I did not over do it and I did not go wild at all! I was disappointed that I could not stay on the fast track but I was reminded that this is life. I can not control it and I went along with it! I could have beaten myself up on having one day off but I decided not too. It's not worth it. Instead I knew in my head that today it was back to the fast track.

I have a new step I'm putting into this week that I did not do last week. I am going to walk my wonderful dogs three times this week or do something extra other than practice for soccer.

Day 8:
B- two eggs over easy, 2 bacon pieces
Ms- string cheese
L-nothing(I had a soccer game at 2, not smart to eat before)
As-nothing
Dinner-pork chops and broccoli
Treat-1 chocolate
Water-112oz
How do I feel: super hungry!!!! :/ ( no more skipping meals or snacks!)

Day five: thankful

It's been a long day of meetings at work, lunch with two of my best friends, and soccer for over an hour! But i am so thankful!!! All I can say is I'm exhausted but so thankful for how the Lord loves me so. I always think I know the desires of my heart but God has a plan for my life that I can either follow or live a life that is not fun and run away from the Lord and be miserable. The Lord is showing me to trust in him more for everything and think of others before myself.

Day five:
B- cottage cheese and walnuts
Ms- cheese
L- salad with chicken and pecans(cheddars) I used little little dressing
As- sunflower seeds
Dinner- steak and cucumber
Treat- 1 square of chocolate
Water- 112 oz of water

Day Four: Reminder

Today I was reminded of the verse,"do not be anxious about anything, but in everything by prayer and supplication with thanksgiving let your requests be made known to God. And the peace of God, which surpasses all understanding, will guard your hearts and your minds in Christ Jesus," Philippians 4:6-7. To be honest sometimes I do not give my worries and anxious thoughts to God and pray about them. I like to think I am super women and can do everything on my own! ;-) This verse is so so good! It says in EVERYTHING (not being able to find your keys, stress at work, hard relationship, things you going through, people who said hateful things to you, and so on) pray about it and tell it to God. When you do this you will get a peace that only God can give you that will calm your heart, head, and sometimes tears. I experienced this tonight!

Today was a little harder for me on day four fast track with Jorge Cruise. Why? Well I am an emotional eater and when something sad or stressful happens to me I want to run to food!! I have always done that. It has been something that would "make" me feel better but thirty minutes later I would feel like poo! Tonight when I was feeling different feelings the thought came to my head to cheat! Yup me cheat! BUT I didn't. You might be thinking, "Mindi, it's ok to give yourself a treat every now and then." And I would say to you Satan get behind me!(lol, jk) I would not have been giving myself a treat I would have been giving into my old ways by which I am trying to break. Instead I drank water and sat and prayed! It is amazing on what you read in the morning that the Lord shows you, and how he reminds you at the end of the day that he is still with you and will never leave you.

Day Four:
B- Eggs and bacon
ms- cheese
L- Salad with chicken
an- cheese with coffee
D- steak and avocado
Treat- 2 squares of chocolate

You might be looking at my old post and thinking to yourself that I eat the same old thing every day. Since I am the only one in my house eating this way and wanting to drop some pounds, when you cook, you have enough for the entire week. To be honest I love cheese, eggs, steak and so I am not complaining at all! Another reason eating this way is easy to do, I do not eat out all the time which saves me money! :D

Day three: what a day!!

Today was an awesome day! The Lord has truly blessed me in the job he put into place. He knew what he was doing when I walking into hof building five years ago. He also allowed me to work part time for hof for those five years! Thank you Jesus!

If you did not know I play soccer! Yup I do!!!! I started playing Indoor soccer over two years ago. I had to take a break last January due to school and work. This past fall I started my own team and they are awesome! I play with the best girls around! They are encouraging and up lifting and committed to playing soccer and playing their hearts out at each game. Today was our first soccer practice for this next season which starts on Sunday! I am very pumped! Who knew I would have loved soccer five years ago? Not me!!!

Fast track day three:
B- forgot to eat!
Ms- cheese stick
L- salad with chicken and pesco sauce on it.
As- coffee with a cheese stick ( I was cold at work!)
D- steak ( the size of my palm) and veggies!
Water- 8 glasses

I want to stay true to my word and myself! I told you I would tell ya my weight and here it is. I weighed in the morning if the 2nd day I was doing the fast track because I forgot on the first day. Here it is....216.6 (head down and ashamed!) I can't believe I let myself become this unhealthy first off! My body is a temple and I only get one on this earth! My Father please please forgive me for putting the processed food in my mouth, over eating and not running to you to be my comfort and provider! Lord help me make my body the temple you intended it to be!

Day two: last day of being a student

Today is my last day of being a "student" before my first full time job. I am excited for tomorrow like a kid who is excited on the first day of school. I've been part time at House of Faith for about five years doing internship, secretary, sales person, mentor, friend, and planner! I used to do that and school! I was a busy busy women! For now the school books are put away and full time job on the way.

Today was day two of fast track with Jorge Cruise's book. It's been great. I know I've only been on it two days but I feel so much better! I'm not full, I have more energy and I'm not tired at 3 pm! I thought i would be hungry eating less but i haven't! Here is what I ate today!
B- 2 eggs with bacon and water
Ms- nothing( I didn't wake up and had breakfast till 9:30)
L- salad with chicken and avocado( picture of my salad bellow)
As- cheese stick
D- hamburger patty with veggies

Water- nine glasses of water

My friend and I after going to the gym this morning went to albertson's and got a lot of meat! This is the place to go if you need steak or pork chops.(picture below) We split it two ways. They had deals like buy one get two free and so on. All that meat i got for about $13. Stock up and freeze the meat if you plan on doing the fast track!

Day one: happy new year!

Today was the first day I started fast track by Jorge Cruise. So far so good. The only bad thing is I tried three bites of my home made pound cake for dinner. One day at a time! Other than that this is what I ate:
B- 2 eggs and bacon
Ms- nothing (at church)
L- house salad at cheddars with a little dressing( with no croutons no role)
As- cheese stick ( was really hungry!)
D- steak ( it was so good!) and asparagus ( and three bites of cake )

Water- drank about 6 cups(need to do better tomorrow!)

Although I ate three bites of cake, I did good on eating but could do better Tomorrows goal is no sugar and no carbs!

I am working out tomorrow with a sweet dear friend of mine. We are going to kick into gear tomorrow. :-)
